Easy Garlic Quinoa

People will rave about this easy quinoa with garlic, which is funny because it is so easy! Serve in place of rice at any meal.

Ingredients

  • 1 tablespoon olive oil
  • 1-2 cloves garlic, crushed
  • 1/2 cup white quinoa
  • 1/2 cup red quinoa
  • 2 cups water
  • 1/2 teaspoon salt

Instructions

  • Add garlic and cook for a few minutes.
  • Pour quinoa into the pan and stir to coat with oil. You can cook the grains in the oil for a few minutes to give it a little toasted flavor, or you don’t have to.
  • Add water and salt. This salt ratio (1/2 teaspoon per cup raw quinoa) is very important, so don’t eyeball it!
  • Bring to a boil, reduce heat, cover and simmer until liquid is absorbed, about 10-15 minutes. Use a fork or spoon to fluff the grains. Serves 4 people as a side dish.

Notes

You can also find tri-color quinoa or mixed color quinoa instead of purchasing the white and red separate.
You can also make quinoa in a rice cooker! Make it ahead and leave it on the warm setting on the rice cooker and it will be ready whenever your other dishes are.
