Best Gluten-Free Pound Cake
Gluten-free, nut-free, soy-free (depending on flour mix used).
Sent in by Karen in San Francisco, CA. Adapted from the pound cake recipe in Thoughts For Food, dated 1946.
Ingredients
1 cup butter
2 cups sugar
4 egg yolks
4 stiffly beaten egg whites
3 cups gluten free flour mix
1 cup milk
1½ tsp xanthan gum
2½ tsp baking powder
1 tsp vanilla
Directions
Cream butter and sugar, add yolks, and beat. Sift flour and xanthan gum. Add gradually two and one-half cups flour alternately with milk. Add remaining flour with baking powder and stir only until smooth. Fold in stiffly beaten whites. Bake in buttered loaf pan at 350 degrees until done, approximately 1.5 hours.

hi just found out im intolerant to a whole list of things inc wheat,eggs ,durum wheat,corn rye flour,quinoa,dairy, eggs,peanut,rice and soya bean ,mushrooms ,brewers yeast and more. im looking for a recipe for bread,cakes,biscuits or pasta. i can eat all fruit and veg,meat and fish,oats,buckwheat,barley,flax seed,millet,wheat bran,sheep and buffalo milk,bakers yeast, need alternatives to eggs, flour, butter milk ,just typing this message has made me depressed think ive hit a brick wall here.

Jan, I know your pain w/ all these allergies. Have you heard about leaky-gut syndrome? I have this, but at its root, I now firmly believe I have Celiac disease or gluten intolerance. If I can fix my gut, many of the foods I’m currently ‘allergic’ to, like you, I will be able to eat again (sans the gluten-containing foods). You might check into it. I have a great book called The Food Intolerance Bible that I got on Amazon. It’s very helpful.

I miss making a good sandwich. The Brown Rice yeast-free bread I am using now is completely tasteless. Is there such a thing as a good Yeast-free sandwich bread????
